Sweet Potato and Kale Pizza

"To save time, make the potato sauce a day ahead and refrigerate," Bemis says.

Ingredients

Makes 6 servings

1 medium sweet potato, peeled and cut into 1/2-inch cubes
1 1/2 tablespoons olive oil, divided
1/8 teaspoon crushed red pepper flakes
1 package (21 ounces) prepared whole-wheat pizza dough
1 bunch curly kale, stemmed and torn into bite-size pieces
1/4 cup crumbled goat cheese
2 tablespoons shredded Parmesan
1 tablespoon crushed walnuts
  1. Heat oven to 425°F. Boil a large pot of water. Cook potato in water until fork-tender, 7 to 10 minutes. Remove from heat, drain and let cool 5 minutes. In a food processor, pulse potato, 1 tablespoon oil, red pepper and a pinch of salt until sauce is smooth. Roll out dough until 1/4 inch thick. Spread potato sauce evenly over dough. Toss kale in remaining 1/2 tablespoon oil; top pizza with goat cheese, kale and Parmesan. Bake until crust is golden, 10 to 15 minutes, sprinkling on walnuts in final 2 minutes.

  • RITA this was just okay . Sounds great but nothing exciting. If the sweet potato purée was livened up it could be a lot better. Roasted garlic? Nutmeg? Caramelized onions? Fresh herbs? Anything! I prepped a full bunch of kale but could not get it all on and I thought it was too much but as previous reviewer mentioned it does shrink down to nothing. Add the whole thing. Miss you!

  • Stuck to the recipe the first time. It was very good, and we figured it is a good base to play around with if you don't want tomato sauce. I like the comments about adding different flavoring to the sweet potato sauce. We have made this a few times, adding toppings to go with the Kale, but this is a keeper for quick, easy, and good pizza

  • This was...weird. Not bad, but not something I'd make again. I added caramelized onions on top, which I liked, but overall not worth the hassle.

  • This is the first pizza I have ever made that didn't turn out. The sauce, while really flavorful and unique, trapped way too much moisture, resulting in an undercooked center despite the hot pizza stone. Cooking longer resulted in burned kale. The pieces that were fully cooked were delightful, but this one just didn't come together.

  • Wow..this was soooooo good!! I did Dr it to my liking.. I added a dash of cumin like some people suggested, then oregano and basil, pepper and garlic,.my go to spices.. a dash of cayenne and the hot pepper flakes. I also added a half of slightly boiled red pepper to sweet potato. After rolling out dough and spreading the sauce I added and thin layer of cheddar, parmigiano and feta. Then the carmalized onions,cooked mushrooms and red pepper. Completly covered it with kale and convection cooked and not 425 for about 15 min.. it was the best pizza I have ever made by far!! Amazing flavors! !

  • I have made this many times. The first few I made it as written. Other times I have either added tahini to the spread, or extra red pepper flakes, or drizzled a balsamic reduction on top after pulling it from the oven, or used feta instead of goat cheese. This is a super quick dinner if you make the spread the day before.

  • I enjoyed this pizza. I made the sauce on Sunday and then prepared the pizza on Tuesday night. It was super fast and easy. I used prepared pizza crust (not the dough but the crust) and it was still good. I would make this again.

  • I've made this 3 times now in the last 3 weeks, and it keeps getting better! I use the Trader Joe's pizza dough and this time added 2 caramelized onions as the base PLUS drizzled some balsamic reduction on the top. WOW. This is a keeper.

  • I loved using sweet potato as the sauce! I also mixed the kale with a little tahini lemon dressing before putting on top of the pizza and then in the oven omittd cheese. I was really good. I then added lightly sauteed mushrooms and onions...after all, it is PIZZA :)

  • This is great, and got enthusiastic comments from guests because of the unique combination of flavors. I did not find a very good whole wheat crust- definitely worth tracking one (or a recipe for one) down. As another reviewer has noted, use much more kale than you think you need because it definitely does shrink. Great pizza!

  • After reading comments from others about the sweet potatoes being bland, I decided to make mine with fiery chili oil. I also added the red pepper flakes. Since I didn't have any walnuts on hand, I used pine nuts which were fabulous. I also made this on the grill using whole wheat dough from the local pizza place. I loved the krispy kale and will definitely make this again. My last piece of advice is to put a lot more kale on the pizza than you think you need because of the "shrinkage".
